Abstract

The superior nutritional, phytochemical composition and therapeutic potential of chia seed drives its increased utilization in industries. This contribution aims to provide an overview for the potential applications of chia seed in various sectors of health and nutrition. Examples are presented to utilize this forgotten seed in promoting health and nutrition of community. Dietary fibers and high amount of phytochemicals could be an effective health promoting factors. Besides the nutritional advantages of chia seed, good amount of phytochemicals can play anti-oxidant role resulting in improving the health of an individual. Incorporation of chia seed in food products especially the development of gluten-free product can be helpful for the people suffering from celiac disease. Chia seed inhibit the activity of cholinesterase (ChE) preventing the occurrence of neurodegenerative diseases. The presence of minerals, lipids (omega-3), fibers, proteins and anti-oxidant in chia seed also provide valuable effects to improve insulin sensitivity and lipid metabolism in the skeletal muscles.
