Enhanced biological activity of polyphenols on conjugation with gellan gum

Abstract

The gellan gum was coupled with hydrophobic polyphenols, curcumin and naringenin using dicyclohexylcarbodiimide and dimethylaminopyridine reaction. The formation of conjugates was ascertained by spectral, thermal, X-ray diffraction, and scanning electron microscopic studies. In silico simulations validated the successful interaction between polysaccharide and polyphenols. The conjugates self-assemble in aqueous solution was confirmed by fluorescence spectroscopy and dynamic light scattering. Further, evaluation unveiled significantly improved radical scavenging and antibacterial activity of conjugates over pristine polyphenols. The conjugates revealed higher anti-cancer activity against human ovarian carcinoma cell lines. In conclusion, polyphenol conjugates showed improved therapeutic efficiency and delivery on conjugation with gum.
