Abstract

We introduced a microfluidic paper-based analytical device (μPAD) to undergraduates majoring in nutrition education using a modified acid–base titration on paper microzones. After designing experiments for sample analysis using micro acid–base titration, students fabricated the devices and implement the experiment as designed. Then they designed and implemented a classical titration method to evaluate the analytical results obtained by micro acid–base titration. Finally, the students completed an instructional design for teaching at secondary or higher vocational colleges. This comprehensive experiment aims to expose students to μPADs, ignite their passion in learning courses related to food analysis or chemistry, train their capabilities in designing an experiment, improve skills in instructional design, and facilitate education of μPADs in secondary or higher vocational colleges. Fifty-three students majoring in nutrition education participated in this comprehensive experiment and completed instructional designs within 2 weeks (14 h) in the fifth semester. Positive feedback from students indicated that the learning objectives of this comprehensive experiment were met.
