Abstract
HIGHLIGHTS A Taguchi design optimized the development of hesperidin-loaded gliadin nanoparticles. A chitosan-coating was added to improve the physical stability of nanoparticles. Nanoparticles reduced the hesperidin cytotoxicity over healthy Vero cells. Nanoparticles improved the hesperidin cytotoxicity over tumor cells.
