Abstract

Wheat is the world's most important agricultural product. It is the most-produced crop in the world, with an annual harvest of ca. 540 million tons. Approximately 90 percent of this production is consumed directly by humans, and consequently wheat supplies ca. 20 percent of the world's total plant-derived edible dry matter (Evans, 1993).
