High resolution raman spectroscopy of raw and UHT bovine and Goat milk

Abstract

The present paper reports on the use of high resolution Raman spectroscopy to investigate goat and bovine milk. Some unique Raman spectral features of goat milk were clearly evidenced, which allowed to discriminate between goat and cow milk. Based on Partial Least Square method, a linear model was proposed to evaluate the addition of bovine milk in goat milk. Additionaly, the sensitivity of Raman scattering to thermal treatments as UHT was investigated. Raman spectra revealed clear features of raw and UHT milk. Results demonstrate that Raman scattering could be used as a rapid method of analysis and discrimination of goat milk.
