Preparation of soybean protein-based nanoparticles and its application as encapsulation carriers of bioactive substances

Abstract
Developing natural delivery carriers suitable for food processing system is recognized as an effective strategy to solve the limiting factors such as low bioavailability of natural bioactive substances. Soybean protein-based nanoparticles are considered as potential natural delivery carriers because of their structural characteristics. In this paper, different preparation methods of different types of soybean protein-based nanoparticles are reviewed. This review also discusses the auxiliary function of soybean protein-based nanoparticles as delivery carriers to improve the accessibility of natural active substances. This review provides a theoretical reference for the wide application of natural bioactive substances in food and medicine, and also provides some suggestions for the high-value application of soybean protein.
