Abstract

Food safety in particular presents a significant barrier to the social and economic development of underdeveloped countries. Edible vegetable oils are prone to quality degradation owing to oxidation and microbial decay, which lowers their nutritional value, similar to other edible vegetable oils. Quality decline may contribute to the production of dangerous and reactive oxidation products, which in turn present health risks like cancer and inflammation. The bulk (more than 98%) of edible oil samples, according to the research report, had issues with quality and safety. With the exception of one research report, all site-collected edible oil samples had physicochemical and microbiological safety issues when compared to international standards (WHO, FAO, FSSAI). Good production and hygiene procedures must be used as the foundation for more comprehensive, coordinated activities aimed at enhancing the safety of edible oil in India. The government should construct a quality and safety management system in the nation and should encourage investors to get involved and develop advanced technologies for edible oil production in India. In this study, the quality of the edible oil is examined using various chemical characteristics. Testing different edible oil metrics can be used to assess the oil's quality. A measurement of the raw material's purity, processing, and storage quality is the Free Fatty Acid (FFA) value. Another indicator of the quality of the oil and fat is the per oxide value (POV). This article discuss the Quality checking of cooking oil by experimenting various chemical properties to identify the purity of the edible cooking oil.
